This year, I asked Cape CARES Board of Directors to provide me with their favorite Thanksgiving recipes. Our Board of Directors ranges from ages 22-75, come from a variety of ethnic and cultural backgrounds, and live all over the United States, Puerto Rico, and Honduras. We meet once a month (sometimes mores) via zoom, and have built a family, despite our distance. We are so thankful to have your support, we wanted to share a little bit of our family traditions with yours.
These recipes are just a little way to thank all of our supporters for helping us provide essential medical and dental care to people living in rural Honduras. We hope you enjoy!

Asja Saulitis’ Cranberry Sauce
Our first recipe comes from DR. Mara Saulitis'

This recipe was written out by my mom on a torn out journal page in her nearly indecipherable handwriting when I was hosting my first Thanksgiving in 1993. The quantities are approximate and I don’t even look at the recipe anymore-rather I throw in some of this and some of that and adjust the sugar to keep the tart more than the sweet. That’s the Latvian way.

A well-loved holiday appetizer, baked brie is wrapped in puff pastry dough, chilled, and then baked until the pastry is perfectly browned and the brie is warm and melty.
Great Grandma’s Carolina Pecan Pie
Our next recipe is from Randy Baldwin, DMD He is our longest serving Board Member
This recipe comes from Randy's Great Grandmother, and has been passed down for five generations! It serves 6-8 people.
Enjoy with whipped cream if desired.
